How can I identify a good apple cultivar?

I've been trying out as much of a variety as I can – there's a sort of local farmers market in my local supermarket, as well as the standard fruit section – but I keep coming back with these rather bland crumbly apples, and they're not exactly juicy either.

I like super crisp crunchy apples that are also very sweet. The kind you break chunks off rather than trying to scoop with your teeth. Back home I get pink ladies/cripps pink, or will go for braeburns or jazz if the pinks are overpriced or unavailable. None of this soft and sandy or practically mushy texture.

Where can I find something similar, and how do I identify it?

(also the apples round here are enormous, is that a common thing?)
